Best Bread Rolls

The best Bread rolls, or Dinner rolls, you've ever tasted! These yummy rolls cook up perfectly fluffy and yummy tasting every time. Can make extra dough to freeze for later use. My husband calls it Monster bread.

I sometimes double the recipe ingredients, and divide the dough after the first rise is done. One half is left in the Bread Machine to become a loaf of bread, the other I remove and make the dinner rolls. The rolls are also fantastic for using as burger buns for Boca Burgers ...YUMMMM

For the rolls, I also let the Machine knead it, and rise for the first time. I use a Breadman Ultimate Plus Bread Maker. It works well for this recipe because I can lift the large top and add flour to adjust dough consistency. This recipe makes 8 to 10 dinner rolls.

Ingredients

  • 2 1/2 to 3 cups Flour
  • 1/4 cup Bob's Red Mill 100% Whole Grain 10 Grain Hot Cereal
  • 1/3 cup Warm Water
  • 4 Tbsp. (1/2 stick) Melted Butter, room temperature
  • 1/4 cup Sugar
  • 1 tsp. Salt
  • 1 Egg Yolk, beaten
  • 1/2 cup Scalded Milk, allowed to cool slightly
  • 1 1/4 tsp. Yeast (or 1 Pkg.)
  • 1 Tbsp. Gluten

Measure out the 1/4 cup of Red Mill Hot Cereal Mix and place it in a small 1 cup tupperware ramekin that has a sealable lid. Add enough water to cover the cereal with just a little over. Seal with lid and let soak in refrigerator overnight. By this method, the rolls or bread will have just a slight crunch. If you are in a hurry, or don't want the crunch texture, microwave the cereal in water for about 30 seconds. Set aside. (Save any unsoaked water)

To the Bread Machine, add the ingredients in the following order: Flour, (only add 2 1/2 cups right now ) Cereal Grain and any extra water, Water, Milk, Butter, Sugar, Salt, Egg Yolk, Gluten and finally Yeast. Set Machine on French (or white) bread setting, 2 lb. loaf, knead and rise only. Turn Machine on.

Allow the Bread Machine to begin mixing the dough. Watch it as it does, and add a bit more flour if the dough is too wet looking after the initial mix. Continue to add flour and let the Machine mix it, until the dough is not sticky. Now let it finish mixing and then knead, rise.

A few moments before the dough will be ready, pre-warm the oven. Take two small baking sheets and cover them with parchment paper. Add a teaspoon or so of flour to the surface you will be placing the dough on. Remove dough from Bread Machine after end of first rise.

Remove the dough and punch it down. While it is still in the ball shape, cut it in half with a knife. Then cut those two halves into halves, and so on until you have 8 to 10 equally sized pieces.

Pinch the edges that were cut together. Then flip them over in your hand and gently press into ball shapes. Place the pinched edge side down onto the baking sheet. You should be able to get 4 or 5 balls onto each sheet, equally spaced.

Place in warm over to rise for another 30 minutes. After 30 minutes, remove baking sheets with rolls from oven. Heat oven to 350° and then cook the rolls for 10 to 13 minutes, or until tops are brown.

Remove and eat right away or allow to cool for 20 minutes before storing them in plastic bag or tupperware.
